olive loaf

This is incredibly delicious! It's made with lardons (a little like bits of bacon or ham) and both black and green olives... in this particular case, green olives stuffed with almonds.

Recipe:
180 grams plain flour
1 packet of yeast
3 eggs
150 grams of gruyere cheese (grated)
100 ml olive oil
100 ml milk (or thick sour cream)
100 grams lardons, fried
100 grams green olives (I love the ones stuffed with almonds!)
100 grams black olives (if the very salty type, boil them first)
a pinch of salt, a pinch of pepper

Preheat oven to 180° C/ 350° F

Mix yeast with flour.

In a separate bowl, beat the eggs, oil, and milk. Add salt and pepper and mix with flour.

Mix in the lardons, then the olives and the gruyere.

Butter and flour a loaf pan and pour in the batter.

Bake for 50 minutes.

Check for doneness by inserting the blade of a knife. It should come out clean.

Cool before removing from pan.

Enjoy!
