This guy is emptying his bags fresh from the olive groves. This machine sorts out the leaves and sticks and leaves only green ripe olives.

Once you have enough of the olive paste on the mats, the mats are then pressed for the oil, then it's strained for impurities, and then poured into buckets to sell!
